The study entitled "Development of Automated Brining Machine for Tinapa” was conducted at the Mechanical Building Department at Cavite State University — Rosario Campus. The design, fabrication and evaluation of the prototype started last October 2015 and being conducted until May 2016. The objectives of the study were design a microcontroller-based brining machine for tinapa processing using Arduino for the automation of the system; construct an automated brining machine for tinapa processing: evaluate the performance of the brining machine in terms of time of brining process, accuracy of brining time, temperature of brine solution before, during and after the brining process and implement the brining machine for tinapa processing. The development of an automated brining machine of tinapa is used to brine with the maximum amount of 5.07 kilograms of fish with the duration time of 6 minutes in 1 process. Once the machine started the brining process, it continuously operates unless there’s a cancelation of the process in the machine. The machine can help to brine fish in an easy and faster way. The machine’s performance was evaluated through ANOVA (Analysis of Variance) to determine the difference of brining time for tinapa processing. The study revealed that the automated brining machine was efficient and faster in terms of brining time compared to traditional tinapa processing. After several trials of brining fish using the automated brining machine, the following conclusions were given: 1) the automated brining machine can brine fish faster as compared to traditional and manual brining process; 2) the temperature of the brine solution using the automated brining machine was accurate before, during and after the brining process; 3) the quantity of fish is not directly proportional to the time of brining process. It doesn’t affect the brining process.
